6 Treasures Pumpkin Rice

This recipe definitely is a good keeper. (Original Recipe Here)

Ingredients

1 1/2 cup rice (wash and drain)
150 gram Pumpkin (cut into small cubes)
2 tbs Dried Shrimp (soak, drain and coarsely chopped)
1 pcs of Chinese sausage (peeled off the skin and cut into small cubes)
6 slices of Roast Duck meat (sliced finely with skin intact) - I used char siew instead
1 tbs Garlic and Shallots (finely chopped)
3 pieces Dried Shitake Mushroom (soften and cut into cubes)

Method :-

1) Heat up 1 tablespoon of oil and 1 teaspoon of sesame oil. Put in the mushrooms, pumpkin
and the chopped garlic and shallots and stir-fry it using medium fire till fragrant.

2)
Put in the washed rice and stir. Add in 1 teaspoon of salt and a few dash of fish sauce
(optional).

3)
Transfer the rice into rice cooker. Add water, the amount of water would be the same as
the amount you cook your white rice.

4)
Sauteed the dried shrimps and chinese sausages using a little bit of oil and put it aside.

5)
Once the rice is cooked immediately put in the sliced roast duck, chinese sausage and dried
shrimp into the rice cooker. Close the lid, off the switch and wait for 5 minutes for the
flavour of the ingredients to release into the rice. Stir gently.

Steamed Eggs

Steamed eggs for tonight dinner. I want to cook something more fancy
but too bad eggs is the only ingredient available in the fridge. So I decided
to make steamed eggs. This is my 2nd attempt to make it. The first attempt,
I failed terribly ask I over steamed the eggs. This time my eggs are just nice
smooth as silken tofu. My niece even praised it.

here's the recipe ( I got it from Kuali.com)

Ingredients
  • 4 eggs
  • ½ tsp salt
  • 1 tsp chicken stock granules
  • 2 tbsp finely chopped char siew pieces (if preferred)
  • 500ml warm water

    Method
Beat eggs and water till well blended. Add salt and chicken stock granules.

Sieve then pour the mixture into a steaming tray or deep plate. Add chopped charsiew (if preferred). Steam over rapid boiling water for 25 minutes.

  • Notes :-
Since I'm using farm eggs which is relatively small compare to normal eggs.
So i reduced the water to 450ml.

I do not have char siew, I omitted it. I believe it will be nicer if add the charsiew.

I add 1 tsp of sake. Wanted to add mushroom but cant find any at home else will
    taste like chawanmushi.

I sprinkle some sesame oil on top.

    2) heat the wok with oil and fry the garlic till fragrant then add celery stir fry add oyster sauce
