Raisins Cupcakes

I want to clear all the raisins that have been sitting inside the fridge since CNY.
So today I bake 2 batches of raisins cupcakes. Got this recipe from simone's blog.
However I did some modification on it.

I used 100gm butter + 100gm margarines this is to suit my mom taste
actually she insisting me to use all margarine as she cant take the buttery taste however
i'm a bit hesitate :P so i just use substitute half of it.

Another thing is that I didnt soak the raisins with rum or grand marnier I use brandy instead.
Which I still have half bottle left after my wedding :P

The cupcakes turn up so well and delicious! I'm so happy, cant wait for my DH come back
to taste it :P

Try not to over beat the butter and sugar. Else, the raisins will sink.

Orange Cream Cheese Cupcakes

Suppose this should be Lemon Cream Cheese Cupcakes but I dont have lemon at home so I just replace it with orange. The taste is just as good and the texture is soft and fine.
I didn't do the glazing as it taste very nice already and a bit sweet. I think it's a bit sweet because
if you used lemon it will be just nice, however as I used orange juice and my oranges taste sweet,
If you dont really like sweet you may want to reduce the sugar. You may get the recipe here.

Moist Carrot Cake


Actually today I'm in the mood to try baking chiffon cake but too bad that
I bought the mold and I forgot left out few ingredient. Months ago my coll. brought some
carrot cake she bake and it taste good. She mention that she got the recipe from
kuali.com search for the recipe and my god there is plenty of carrot cake recipes.
I dont have blackcurrants and nuts so i just substitute it with mix fruits. I should have
put a teaspoon of brandy as I use mix fruits sigh... Anyway the cake is too moist,
lack of carrot taste and overwhelming with tangerine taste which from the mix fruits.
I bet after this my mom will banned me from baking any more cakes :P

Japanese Soft-Center Runny Hardboiled Egg

I saw this type of hardboiled eggs before but I always think
how they make it? I'm so happy to get the recipe from one of my favourites blog
It was terrible easy and taste nice too (except a bit salty).
Definitely goes very well with porridge or loh mee...
There is still 1 and half eggs left for dinner just now. I scared I will whacked it before
my hb come back from work :P

Anyway I had make another 8 eggs for tomorrow breakfast. Me and my plan to eat loh mee together with this eggs.. yummy..


Kaya Sugar Roll



Finally I got! after 3-4 times attempts to roll it without cracked and I got it right this time. Yay!
but too bad my mom and hb already jelak eating my swiss roll :(

Salted Fish Fried Rice


I got nothing to eat for dinner lastnite so I just use whatever ingredients that in the fridge.

Coffee Spare Ribs


I dont really like the taste. It taste like u pour a burnt gravy on a fried spare ribs as the
coffee give the bitter taste.. probably the recipe need some modification. Perhaps
need to put less coffee and add some honey. Anyway here's the recipe

Nutella Swirl Cupcakes

I got this recipe from Jo's Deli & Bakery forum for quite some time ago but didnt get the chance
to do it. The texture of the cuppies are very soft and fine. HB and mom loves it alot...this recipe definitely a keeper!


Miso Soup Mee Suah

My mom not home today so I have to cooked for dinner. Since there is still left some spinach mee suah that I bought during my last visit to Pangkor, I decided to cooked mee suah.
But I totally dunno what I can do with it.. so i asked my friend who that time i was chatting
with. She told me that she will boiled with miso soup. That's a great combination, after work
i drive straight to Tesco to get the miso paste and some ingredients and there goes .....

Chrysanthemum Tea Loaf

Each time my visit to my in laws, my mom in law always give me a packet of dried
chrysanthemum flower. I have packets of it sitting in the fridge. So when I came across this
recipe in Jo's website I got excited and really want to try it out. Moreover, it's something new
and i'm eager to know how it actually taste like.
